Description

Cheesy Pesto Baked Chicken is a simple and delicious dinner that’s full of flavor! With a pesto spread, melted cheese, and tender chicken, this dish is perfect for a quick weeknight meal or a special dinner. It’s easy to prepare and always a crowd-pleaser!


Ingredients

  • 4 boneless, skinless chicken breasts

  • 1/2 cup pesto (store-bought or homemade)

  • 1 cup shredded mozzarella cheese

  • 1 cup grated Parmesan cheese

  • 1 tablespoon olive oil

  • Salt and pepper, to taste

 

  • Fresh basil leaves (optional, for garnish)


Instructions

  • Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil or cooking spray.

  • Season both sides of the chicken breasts with salt and pepper.

  • Place the chicken breasts in the prepared baking dish.

  • Spread 1 tablespoon of pesto over the top of each chicken breast.

  • Sprinkle the shredded mozzarella and Parmesan cheese over the pesto-coated chicken breasts.

  • Bake in the preheated oven for 25–30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C).

  • Once the chicken is cooked, remove from the oven and let it rest for a few minutes.

 

  • Garnish with fresh basil leaves (optional) and serve.


Notes

  • You can use store-bought pesto or make your own using fresh basil, garlic, pine nuts, Parmesan, and olive oil.

  • If you want extra flavor, try adding a drizzle of balsamic glaze before serving.

 

  • This dish pairs well with roasted vegetables, pasta, or a fresh salad.
