- 1 (30-ounce) bag frozen hash browns, thawed
- 1 pound breakfast sausage (pork, turkey, or chicken)
- 1 small onion, diced
- 1 bell pepper, diced (optional)
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
Egg Mixture:
- 8 large eggs
- 1 cup milk (whole or 2%)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
Instructions
- Preheat the oven to 375ยฐF (190ยฐC). Grease a 9×13-inch baking dish.
- Cook the sausage in a skillet over medium heat, breaking it apart as it browns. Add the diced onion and bell pepper, and cook until soft. Drain any excess grease.
- Spread the hash browns evenly in the greased baking dish. Layer the cooked sausage mixture on top.
- Sprinkle the cheeses evenly over the sausage and hash browns.
- Whisk the eggs, milk, and seasonings in a bowl until fully combined.
- Pour the egg mixture evenly over the casserole.
