Ingredients

Units Scale

Base Ingredients:

  • 1 (30-ounce) bag frozen hash browns, thawed
  • 1 pound breakfast sausage (pork, turkey, or chicken)
  • 1 small onion, diced
  • 1 bell pepper, diced (optional)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

Egg Mixture:

  • 8 large eggs
  • 1 cup milk (whole or 2%)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika

Instructions

  1. Preheat the oven to 375ยฐF (190ยฐC). Grease a 9×13-inch baking dish.
  2. Cook the sausage in a skillet over medium heat, breaking it apart as it browns. Add the diced onion and bell pepper, and cook until soft. Drain any excess grease.
  3. Spread the hash browns evenly in the greased baking dish. Layer the cooked sausage mixture on top.
  4. Sprinkle the cheeses evenly over the sausage and hash browns.
  5. Whisk the eggs, milk, and seasonings in a bowl until fully combined.
  6. Pour the egg mixture evenly over the casserole.
  7. Bake uncovered for 35-40 minutes, or until the eggs are set and the top is golden brown.
  8. Let it cool for 5 minutes before slicing and serving.

Notes

  • Swap sausage for bacon or ham if preferred.
  • Use pepper jack cheese for extra spice!
  • Make it vegetarian by skipping the sausage and adding mushrooms or spinach.
  • Make ahead: Assemble the night before, cover, and refrigerate. Bake in the morning!
  • Store leftovers in the fridge for up to 4 days or freeze for later.
