- 1 pound breakfast sausage
- 8 large eggs
- 1 cup shredded cheddar cheese
- 8 large flour tortillas
- Salt and pepper to taste
- 1 tablespoon butter or oil for cooking
Instructions
- Cook the Sausage:ย In a large skillet over medium heat, cook the sausage until browned and fully cooked, breaking it into crumbles as it cooks. Once done, remove the sausage from the skillet and set aside.
- Prepare the Eggs:ย In a bowl, whisk the eggs with a pinch of salt and pepper. In the same skillet, melt the butter or heat the oil over medium heat. Pour in the eggs and cook, stirring gently, until they are scrambled and just set. Remove from heat.
- Assemble the Wraps:ย Lay a tortilla flat and sprinkle some shredded cheese in the center. Add a portion of the scrambled eggs and cooked sausage on top of the cheese.
- Roll the Wraps:ย Fold in the sides of the tortilla over the filling, then roll it up tightly from the bottom to secure all the ingredients inside.
- Optional – Toast the Wraps:ย For a crispy exterior, place the wraps seam-side down in the skillet over medium heat. Toast for 1-2 minutes on each side until golden brown.
Notes
- These wraps can be made ahead of time and stored in the refrigerator for up to 3 days. To reheat, wrap them in a damp paper towel and microwave for about 1 minute.
- For longer storage, wrap the assembled (but untoasted) wraps tightly in plastic wrap and then in aluminum foil, and freeze for up to 3 months. To reheat, remove the foil, wrap in a damp paper towel, and microwave for 2-3 minutes until heated through.
