For the Meatloaf Mixture

  • 1 lb (450g) ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1/4 cup finely diced onion
  • 2 cloves garlic, minced
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried Italian herbs
  • 3/4 tsp salt
  • 1/2 tsp black pepper

For Filling

  • 4 oz (115g) cheddar cheese (or mozzarella), cut into 1/2-inch cubes

For Topping

  • 2 tbsp ketchup
  • 1 tbsp brown sugar

Instructions

  1. Preheat and Prepare Pan – Preheat your oven to 400ยฐF (200ยฐC). Lightly grease a mini muffin tin or line a baking sheet with parchment paper.
  2. Make the Meatloaf Mixture – In a large bowl, combine the ground beef, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, Italian herbs, salt, and pepper. Gently mix until fully combined but do not overwork the meat, to keep the bites tender.
  3. Form the Meatloaf Bites – Scoop a tablespoon of the meat mixture, flatten it in your hand, place a cheese cube in the center, and wrap the meat around it to form a ball. Repeat until all mixture is used.
  4. Arrange and Top – Place each meatball in the cup of the muffin tin (or on the baking sheet). In a small bowl, mix together ketchup and brown sugar, then brush over the tops of each meatloaf bite.
  5. Bake – Bake for 15-18 minutes, or until the meat is fully cooked and the cheese is gooey in the center.
  6. Serve – Let cool for a few minutes, then serve warm. Enjoy as is, or with your favorite dipping sauce.

  • Swap cheddar for mozzarella or pepper jack for a different flavor.
