Ingredients

Units Scale

For the Brownie Layer:

  • 1 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

For the Cheesecake Layer:

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Cherry Swirl:

  • 1/2 cup cherry pie filling (store-bought or homemade)

Instructions

  1. Preheat the ovenย to 350ยฐF (175ยฐC). Line a 9ร—13-inch baking dish with parchment paper and lightly grease it.
  2. Make the brownie batter: In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar. Add the eggs and vanilla extract, and mix until combined.
  3. In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. Gradually fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.
  4. Prepare the cheesecake layer: In another bowl, beat the softened cream cheese, sugar, egg, and vanilla extract until smooth and creamy.
  5. Assemble: Pour about two-thirds of the brownie batter into the prepared baking dish, spreading it evenly. Spoon the cheesecake mixture on top in dollops, then swirl it gently into the brownie layer using a knife or toothpick.
  6. Add the cherry swirl: Drop spoonfuls of cherry pie filling over the cheesecake layer and swirl it gently with a knife to create a marbled effect.
  7. Bake: Place the dish in the oven and bake for 35-40 minutes or until a toothpick inserted into the center comes out with just a few moist crumbs.
  8. Cool and serve: Let the brownies cool in the pan before slicing. Serve as is, or chill in the refrigerator for a firmer texture.

Notes

  • For extra indulgence, serve these brownies with a scoop of vanilla ice cream.
  • You can use fresh cherries or cherry preserves in place of cherry pie filling if you prefer a more natural flavor.
