- 1 lb boneless, skinless chicken breasts, diced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 12 oz penne pasta
- 3 cups marinara sauce
- 2 cups water or chicken broth
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil (optional)
- 1/2 cup seasoned breadcrumbs (optional, for topping)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add diced chicken, season with salt, pepper, garlic powder, and Italian seasoning, and cook until browned.
- Add uncooked pasta, marinara sauce, and water or broth to the skillet. Stir to combine.
- Bring to a boil, then reduce heat to medium-low. Cover and simmer for 15-20 minutes, stirring occasionally, until pasta is tender and chicken is cooked through.
- Remove lid and stir in mozzarella and Parmesan cheese until melted and combined.
- Top with breadcrumbs if desired and broil for 2-3 minutes until golden.
- Garnish with fresh basil before serving.
Notes
- Use pre-cooked chicken to save time.
- Substitute penne with any short pasta variety.
- For extra flavor, use chicken broth instead of water.
