Instructions
- In a bowl, combine the shredded or diced chicken with Greek yogurt or mayonnaise and Dijon mustard. Stir to combine.
- Add the chopped celery, grapes (if using), walnuts (if using), and parsley. Mix everything together and season with salt and pepper to taste.
- Place a spoonful of the chicken salad mixture onto each cucumber slice or cracker.
- Garnish with additional parsley or nuts if desired.
- Serve immediately as an appetizer or store in the refrigerator for up to 2 days.
Notes
- You can substitute the Greek yogurt with mayonnaise for a richer taste or use a combination of both.
