Description

Chicken Stew is a hearty and comforting dish made with tender chicken, vegetables, and a savory brothโ€”perfect for a cozy family dinner or chilly evenings.


Ingredients

  • 2 tbsp olive oil
  • 1 1/2 lbs boneless, skinless chicken thighs or breasts, cut into chunks
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 3 potatoes, peeled and cubed
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt and pepper to taste
  • 4 cups chicken broth
  • 2 tbsp all-purpose flour (optional, for thickening)
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken pieces and cook until browned on all sides. Remove and set aside.
  2. In the same pot, add onion and garlic. Cook until fragrant and softened, about 3-4 minutes.
  3. Add carrots, celery, and potatoes. Stir in thyme, rosemary, salt, and pepper.
  4. Return chicken to the pot and pour in chicken broth. Bring to a boil, then reduce heat to low and cover.
  5. Simmer for 30โ€“40 minutes, or until chicken is cooked through and vegetables are tender.
  6. If a thicker stew is desired, mix flour with a little water and stir into the stew. Simmer an additional 5 minutes until thickened.
  7. Garnish with chopped parsley and serve warm.

Notes

  • You can add green peas or corn during the last 10 minutes of cooking for extra flavor and color.
  • Using chicken thighs adds more flavor and tenderness compared to chicken breasts.
