- 2 cups cooked, shredded chicken
- 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
- 4 oz cream cheese, softened
- 1/3 cup salsa
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp ground cumin
- 1/2 tsp chili powder
- 1/4 tsp salt
- 10 small flour or corn tortillas
- Cooking spray or oil for brushing
Instructions
- Preheat the oven or prepare the fryer:
- For baking: Preheat the oven to 425ยฐF (220ยฐC) and line a baking sheet with parchment paper.
- For frying: Heat about 1 inch of oil in a deep skillet to 375ยฐF (190ยฐC).
- Prepare the filling:
- In a large mixing bowl, combine shredded chicken, shredded cheese, cream cheese, salsa, garlic powder, onion powder, cumin, chili powder, and salt. Mix until well combined.
- Assemble the taquitos:
- Warm the tortillas slightly to make them pliable.
- Spoon 2-3 tablespoons of the filling onto one side of each tortilla.
- Roll tightly, securing the seam side down.
- Cook the taquitos:
- For baking: Arrange the taquitos seam-side down on the prepared baking sheet. Lightly brush or spray with cooking oil. Bake for 15-20 minutes, or until crispy and golden.
- For frying: Fry 2-3 taquitos at a time, seam-side down, until golden and crispy, about 2-3 minutes per side. Drain on paper towels.

- Serve warm with your favorite dips like guacamole, sour cream, or salsa.

- Substitute flour tortillas with gluten-free tortillas if needed.
