Instructions

  1. Season the Chicken: Pat the chicken breasts dry with paper towels. In a small bowl, mix the chili powder, garlic powder, paprika, salt, and black pepper. Rub the spice mixture evenly over both sides of the chicken breasts.
  2. Cook the Chicken: Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes per side, or until golden brown and cooked through (the internal temperature should reach 165ยฐF/74ยฐC). Remove from heat and let rest for a few minutes.
  3. Prepare the Mango Salsa: While the chicken cooks, combine the diced mango, red onion, red bell pepper, jalapeรฑo, cilantro, and lime juice in a medium bowl. Toss everything together until well mixed, then season with salt to taste.
