- 1 1/2 cups shredded coconut (unsweetened)
- 1 cup almond flour
- 1/4 cup cocoa powder (unsweetened)
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 2 tablespoons coconut oil (melted)
- 1/4 teaspoon sea salt
- 1/2 cup chopped almonds (optional, for extra crunch)
- 1/2 cup dark chocolate chips (for coating, optional)
- 1 tablespoon coconut oil (for chocolate coating, optional)
Instructions
- In a large mixing bowl, combine shredded coconut, almond flour, cocoa powder, and sea salt.
- Add the melted coconut oil, maple syrup (or honey), and vanilla extract. Stir until everything is well mixed and forms a sticky dough.
- If adding chopped almonds for extra crunch, fold them into the mixture.
- Roll the mixture into small balls, about 1-inch in diameter, and place them on a baking sheet lined with parchment paper.
- If coating with chocolate: Melt the dark chocolate chips and 1 tablespoon of coconut oil in a microwave-safe bowl, stirring every 20 seconds until smooth.
- Dip each ball into the melted chocolate and place them back on the parchment paper.
- Refrigerate the balls for at least 30 minutes to set, or until firm.
- Serve chilled and enjoy! Store any leftovers in the refrigerator in an airtight container.
Notes
- You can substitute the almond flour with oat flour if you prefer.
- Add a sprinkle of sea salt on top of the chocolate coating for a salted chocolate twist.
- If youโre not coating in chocolate, the balls can also be rolled in extra shredded coconut for added texture.
