  • 1 1/2 cups shredded coconut (unsweetened)
  • 1 cup almond flour
  • 1/4 cup cocoa powder (unsweetened)
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons coconut oil (melted)
  • 1/4 teaspoon sea salt
  • 1/2 cup chopped almonds (optional, for extra crunch)
  • 1/2 cup dark chocolate chips (for coating, optional)
  • 1 tablespoon coconut oil (for chocolate coating, optional)

Instructions

  1. In a large mixing bowl, combine shredded coconut, almond flour, cocoa powder, and sea salt.
  2. Add the melted coconut oil, maple syrup (or honey), and vanilla extract. Stir until everything is well mixed and forms a sticky dough.
  3. If adding chopped almonds for extra crunch, fold them into the mixture.
  4. Roll the mixture into small balls, about 1-inch in diameter, and place them on a baking sheet lined with parchment paper.
  5. If coating with chocolate: Melt the dark chocolate chips and 1 tablespoon of coconut oil in a microwave-safe bowl, stirring every 20 seconds until smooth.
  6. Dip each ball into the melted chocolate and place them back on the parchment paper.
  7. Refrigerate the balls for at least 30 minutes to set, or until firm.
  8. Serve chilled and enjoy! Store any leftovers in the refrigerator in an airtight container.

Notes

  • You can substitute the almond flour with oat flour if you prefer.
  • Add a sprinkle of sea salt on top of the chocolate coating for a salted chocolate twist.
  • If youโ€™re not coating in chocolate, the balls can also be rolled in extra shredded coconut for added texture.
