Description

Decadent and fudgy brownies topped with fresh strawberries and a rich chocolate coating. These chocolate covered strawberry brownies are a perfect treat for special occasions or whenever you’re craving something indulgent.


Ingredients

  • 1/2 cup (115g) vegan butter, melted
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) brown sugar
  • 1 tsp vanilla extract
  • 2 flax eggs (2 tbsp ground flaxseed + 5 tbsp water)
  • 3/4 cup (90g) all-purpose flour
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup (175g) vegan chocolate chips, melted
  • 1 cup fresh strawberries, halved
  • 1/2 cup vegan chocolate chips (for topping)
  • 1 tbsp coconut oil

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a small bowl, mix ground flaxseed and water to make flax eggs. Let sit for 5 minutes to thicken.
  3. In a large mixing bowl, whisk together melted vegan butter, granulated sugar, brown sugar, and vanilla extract.
  4. Add the flax eggs and mix until combined.
  5. Sift in flour, cocoa powder, baking powder, and salt. Mix until just combined.
  6. Fold in the melted chocolate chips until smooth and thick.
  7. Pour the batter into the prepared baking pan and smooth the top.
  8. Bake for 30-35 minutes, or until a toothpick inserted comes out mostly clean. Let cool completely.
  9. Arrange halved strawberries over the cooled brownies in a single layer, cut side down.
  10. Melt remaining chocolate chips with coconut oil, then drizzle or spread over the strawberries.
  11. Chill in the fridge for 20-30 minutes until the chocolate sets.
  12. Slice and serve.

Notes

  • Make sure brownies are completely cool before topping with strawberries and chocolate.
  • Store in the refrigerator for up to 3 days for best texture and freshness.
  • Use ripe but firm strawberries to prevent excess moisture.
