- 1/2 cup (115g) vegan butter, melted
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) brown sugar
- 1 tsp vanilla extract
- 2 flax eggs (2 tbsp ground flaxseed + 5 tbsp water)
- 3/4 cup (90g) all-purpose flour
- 1/2 cup (45g) unsweetened cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup (175g) vegan chocolate chips, melted
- 1 cup fresh strawberries, halved
- 1/2 cup vegan chocolate chips (for topping)
- 1 tbsp coconut oil
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a small bowl, mix ground flaxseed and water to make flax eggs. Let sit for 5 minutes to thicken.
- In a large mixing bowl, whisk together melted vegan butter, granulated sugar, brown sugar, and vanilla extract.
- Add the flax eggs and mix until combined.
- Sift in flour, cocoa powder, baking powder, and salt. Mix until just combined.
- Fold in the melted chocolate chips until smooth and thick.
- Pour the batter into the prepared baking pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted comes out mostly clean. Let cool completely.
- Arrange halved strawberries over the cooled brownies in a single layer, cut side down.
- Melt remaining chocolate chips with coconut oil, then drizzle or spread over the strawberries.
- Chill in the fridge for 20-30 minutes until the chocolate sets.
- Slice and serve.
Notes
- Make sure brownies are completely cool before topping with strawberries and chocolate.
- Store in the refrigerator for up to 3 days for best texture and freshness.
- Use ripe but firm strawberries to prevent excess moisture.
