- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar (for crust)
- 6 tbsp unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar (for filling)
- 1 tsp vanilla extract
- 3 large eggs
- 1/2 cup sour cream
- 1/4 cup heavy cream
- 1 1/2 cups fresh strawberries, halved
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream (for ganache)
Instructions
- Preheat oven to 325°F (160°C). Wrap the bottom of a 9-inch springform pan with foil and lightly grease the inside.
- In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the bottom of the pan. Bake for 10 minutes and let cool.
- In a large mixing bowl, beat the cream cheese until smooth. Add 1 cup sugar and mix until combined. Beat in vanilla, then add eggs one at a time, mixing just until incorporated.
- Mix in sour cream and 1/4 cup heavy cream until smooth. Pour the filling over the crust and smooth the top.
- Place the pan in a larger roasting pan and add hot water halfway up the sides (water bath). Bake for 55–65 minutes, or until the center is just set.
- Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour. Then refrigerate at least 4 hours or overnight.
- Once chilled, arrange halved strawberries over the top of the cheesecake in a single layer.
- To make the ganache, heat 1/2 cup heavy cream until just simmering. Pour over chocolate chips and let sit 1 minute. Stir until smooth, then pour over strawberries.
- Refrigerate for 30 minutes to set the ganache before serving.
