Description

Instructions

  1. Preheat oven to 325ยฐF (160ยฐC). Wrap the bottom of a 9-inch springform pan with foil and lightly grease the inside.
  2. In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the bottom of the pan. Bake for 10 minutes and let cool.
  3. In a large mixing bowl, beat the cream cheese until smooth. Add 1 cup sugar and mix until combined. Beat in vanilla, then add eggs one at a time, mixing just until incorporated.
  4. Mix in sour cream and 1/4 cup heavy cream until smooth. Pour the filling over the crust and smooth the top.
  5. Place the pan in a larger roasting pan and add hot water halfway up the sides (water bath). Bake for 55โ€“65 minutes, or until the center is just set.
  6. Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour. Then refrigerate at least 4 hours or overnight.
  7. Once chilled, arrange halved strawberries over the top of the cheesecake in a single layer.
  8. To make the ganache, heat 1/2 cup heavy cream until just simmering. Pour over chocolate chips and let sit 1 minute. Stir until smooth, then pour over strawberries.
  9. Refrigerate for 30 minutes to set the ganache before serving.
