Description

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar (for crust)
  • 6 tbsp unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar (for filling)
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 1 1/2 cups fresh strawberries, halved
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream (for ganache)

Instructions

  1. Preheat oven to 325°F (160°C). Wrap the bottom of a 9-inch springform pan with foil and lightly grease the inside.
  2. In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the bottom of the pan. Bake for 10 minutes and let cool.
  3. In a large mixing bowl, beat the cream cheese until smooth. Add 1 cup sugar and mix until combined. Beat in vanilla, then add eggs one at a time, mixing just until incorporated.
  4. Mix in sour cream and 1/4 cup heavy cream until smooth. Pour the filling over the crust and smooth the top.
  5. Place the pan in a larger roasting pan and add hot water halfway up the sides (water bath). Bake for 55–65 minutes, or until the center is just set.
  6. Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour. Then refrigerate at least 4 hours or overnight.
  7. Once chilled, arrange halved strawberries over the top of the cheesecake in a single layer.
  8. To make the ganache, heat 1/2 cup heavy cream until just simmering. Pour over chocolate chips and let sit 1 minute. Stir until smooth, then pour over strawberries.
  9. Refrigerate for 30 minutes to set the ganache before serving.
