Description

  • 1/4 cup granulated sugar (for crust)
  • 6 tbsp unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar (for filling)
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 1 1/2 cups fresh strawberries, halved
  • 1/2 cup heavy cream (for ganache)
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan and wrap the outside with foil to prevent leaks.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of the pan to form a crust. Bake for 10 minutes, then cool.
  3. In a large bowl, beat cream cheese until smooth. Add 1 cup sugar and beat until fluffy. Mix in eggs one at a time, then add vanilla, sour cream, and 1/4 cup heavy cream.
  4. Pour filling over the crust. Bake in a water bath for 55–65 minutes, or until the center is just set. Turn off oven, crack door, and let cheesecake cool inside for 1 hour.
  5. Refrigerate at least 4 hours or overnight until fully chilled.
  6. Top chilled cheesecake with halved strawberries in a single layer.
  7. For ganache, heat 1/2 cup heavy cream until just simmering. Pour over chocolate chips and let sit 1 minute. Stir until smooth, then pour over strawberries.
  8. Chill 30 minutes before serving to set the ganache.
