- 1 cup fresh strawberries, chopped
- 1 cup plain Greek yogurt (or vanilla yogurt for added sweetness)
- 2 tablespoons honey or maple syrup (optional, for added sweetness)
- 1 teaspoon vanilla extract (optional)
- 1 cup dark chocolate chips
- 1 tablespoon coconut oil (optional, for smoother chocolate coating)
Instructions
- Prepare the Yogurt Mixture:
In a bowl, combine the chopped strawberries with Greek yogurt. Add honey/maple syrup and vanilla extract if using. Stir until the strawberries are evenly coated. - Form the Clusters:
Line a baking sheet with parchment paper. Spoon small dollops of the strawberry-yogurt mixture onto the sheet, forming bite-sized clusters. - Freeze:
Place the baking sheet in the freezer for about 1-2 hours, or until the clusters are completely frozen and firm. - Melt the Chocolate:
In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth. - Coat the Clusters:
Remove the frozen clusters from the freezer. Using a fork or spoon, dip each cluster into the melted chocolate, ensuring itโs fully coated. Place them back on the parchment-lined baking sheet. - Final Freeze:
Return the chocolate-covered clusters to the freezer for another 30 minutes or until the chocolate is set. - Serve and Enjoy:
Enjoy straight from the freezer for a cool, refreshing treat!
