Description

This Chorizo Breakfast Burrito is packed with spicy chorizo, fluffy scrambled eggs, crispy potatoes, and melted cheese, all wrapped up in a warm tortilla. Itโ€™s a filling and flavorful breakfast thatโ€™s perfect for starting your day or enjoying on the go. You can customize it with your favorite toppings like avocado, salsa, or sour cream.

Ingredients

Units Scale
  • 8 oz chorizo sausage (ground)
  • 4 large eggs
  • 1 medium potato (diced)
  • 1/2 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Salsa (optional, for serving)
  • Sour cream (optional, for serving)
  • Avocado (optional, for serving)

Instructions

  1. Cook the chorizo: In a skillet over medium heat, cook the chorizo sausage, breaking it up with a spoon, until browned and cooked through (about 6-8 minutes). Remove from the pan and set aside.
  2. Cook the potatoes: In the same skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and cook, stirring occasionally, until crispy and golden brown, about 8-10 minutes. Season with salt and pepper, then remove from the pan and set aside.
  3. Sautรฉ the vegetables: In the same skillet, add the diced onion and bell pepper. Cook for 4-5 minutes, until softened and fragrant.
  4. Scramble the eggs: In a bowl, whisk the eggs with a pinch of salt and pepper. Pour the eggs into the skillet with the vegetables and cook, stirring gently, until scrambled and fully cooked.
  5. Assemble the burritos: Warm the flour tortillas in a dry skillet or microwave. Divide the chorizo, potatoes, scrambled eggs, and shredded cheese evenly among the tortillas.
  6. Wrap and serve: Roll the tortillas into burritos by folding in the sides and rolling from one end. Serve with salsa, sour cream, and avocado if desired.

Notes

  • You can add extra toppings like jalapeรฑos, hot sauce, or fresh cilantro for extra flavor.
  • For a healthier twist, use whole wheat tortillas and substitute turkey chorizo.
