Instructions

  1. Prep the Ingredients: Lay out the bread slices on a clean surface. If adding onions, tomatoes, or spices, slice them now. Have the chutney and cheese ready to go.
  2. Spread Chutney: Evenly spread about 2 teaspoons of green chutney onto one side of each slice of bread. For a milder flavor, use less chutney or thin it with a little butter or yogurt.
  3. Assemble Sandwiches: Place a slice of cheese on the chutney side of two bread slices. Top with onion, tomato, and a light sprinkle of chaat masala or black pepper if using. Cover with remaining bread slices, chutney-side down, to make two sandwiches.
  4. Butter the Outside: Spread a generous layer of softened butter on the outside of each sandwich (the sides that will go on the pan). This gives the sandwich that classic crispy, golden crust.
  5. Grill the Sandwiches: Heat a skillet or frying pan over medium heat. Place sandwiches in the skillet, buttered side down. Cook for about 2โ€“3 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese has melted. If needed, lower the heat so the bread toasts slowly and the cheese melts thoroughly.
