- Spread Chutney: Evenly spread about 2 teaspoons of green chutney onto one side of each slice of bread. For a milder flavor, use less chutney or thin it with a little butter or yogurt.
- Assemble Sandwiches: Place a slice of cheese on the chutney side of two bread slices. Top with onion, tomato, and a light sprinkle of chaat masala or black pepper if using. Cover with remaining bread slices, chutney-side down, to make two sandwiches.
- Butter the Outside: Spread a generous layer of softened butter on the outside of each sandwich (the sides that will go on the pan). This gives the sandwich that classic crispy, golden crust.
- Grill the Sandwiches: Heat a skillet or frying pan over medium heat. Place sandwiches in the skillet, buttered side down. Cook for about 2โ3 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese has melted. If needed, lower the heat so the bread toasts slowly and the cheese melts thoroughly.
- Serve: Slice the sandwiches diagonally and serve hot, ideally with ketchup or extra chutney for dipping.
