Green Chutney
- 1 cup fresh cilantro leaves
- 1/2 cup fresh mint leaves
- 1 green chili (seeded for less heat, optional)
- 1 tablespoon lemon juice
- 1/2 inch piece ginger
- 1 clove garlic
- 1/2 teaspoon salt (adjust to taste)
- 1 teaspoon sugar
- 2 tablespoons water (as needed for blending)

Instructions
- Prepare the Green Chutney: In a blender or food processor, combine cilantro, mint, green chili, lemon juice, ginger, garlic, salt, sugar, and water. Blend until smooth and spreadable. Taste and adjust seasoning if needed.
- Prep the Bread: Spread softened butter evenly on one side of each bread slice. Flip the bread over and spread a generous layer of green chutney on the other side.
- Add Cheese: Place a slice of cheese on two bread slices (the non-butter, chutney side). If desired, add tomato or onion slices and sprinkle a little chaat masala for a flavor boost.
- Assemble Sandwich: Top each cheese-covered slice with another bread slice, buttered side facing out, to form a sandwich.
- Grill the Sandwich: Heat a large skillet or grill pan over medium-low heat. Place the sandwiches on the pan and cook for 2-3 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
- Serve: Remove sandwiches from the pan. Let rest for a minute before slicing in half. Serve hot with extra chutney or ketchup for dipping.
