- 1 cup long grain white rice
- 2 cups water
- 1 tablespoon olive oil or butter
- 1/2 teaspoon salt
- 1 lime, juiced and zested
- 1/2 cup fresh cilantro, chopped
- 1 clove garlic, minced (optional)
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a medium saucepan, bring water to a boil. Add rice, olive oil or butter, and salt.
- Reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and water is absorbed.
- Remove from heat and let sit, covered, for 5 minutes.
- Fluff the rice with a fork, then stir in lime juice, lime zest, chopped cilantro, and minced garlic if using.
- Serve warm as a side dish.
Notes
- Use freshly squeezed lime juice for the best flavor.
- Brown rice can be substituted, but adjust cooking time accordingly.
- Add more lime or cilantro to taste depending on your preference.
