Description

Cilantro Lime Rice is a flavorful and fresh side dish made with fluffy rice, zesty lime juice, and chopped cilantro. Itโ€™s perfect for pairing with Mexican or Tex-Mex dishes.


Ingredients

  • 1 cup long grain white rice
  • 2 cups water
  • 1 tablespoon olive oil or butter
  • 1/2 teaspoon salt
  • 1 lime, juiced and zested
  • 1/2 cup fresh cilantro, chopped
  • 1 clove garlic, minced (optional)

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, bring water to a boil. Add rice, olive oil or butter, and salt.
  3. Reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and water is absorbed.
  4. Remove from heat and let sit, covered, for 5 minutes.
  5. Fluff the rice with a fork, then stir in lime juice, lime zest, chopped cilantro, and minced garlic if using.
  6. Serve warm as a side dish.

Notes

  • Use freshly squeezed lime juice for the best flavor.
  • Brown rice can be substituted, but adjust cooking time accordingly.
