Description

A fresh, tangy, and crunchy cilantro lime slaw perfect as a side dish or taco topping.


Ingredients

  • 4 cups shredded green cabbage
  • 1 cup shredded purple cabbage
  • 1/2 cup shredded carrots
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice (freshly squeezed)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 teaspoon garlic powder or minced garlic

Instructions

  1. In a large mixing bowl, combine the green cabbage, purple cabbage, shredded carrots, and chopped cilantro.
  2. In a small bowl, whisk together the mayonnaise, lime juice, apple cider vinegar, honey, salt, pepper, and optional garlic until smooth.
  3. Pour the dressing over the cabbage mixture and toss to coat evenly.
  4. Let the slaw sit for at least 15 minutes to allow flavors to meld. Chill if desired.
  5. Serve as a side dish or use as a topping for tacos, sandwiches, or grilled meats.

Notes

  • This slaw can be made a few hours in advance and stored in the refrigerator.
  • For a vegan version, use vegan mayo and maple syrup instead of honey.
  • Add sliced jalapeรฑos for a spicy kick.
