- 4 cups shredded green cabbage
- 1 cup shredded purple cabbage
- 1/2 cup shredded carrots
- 1/4 cup chopped fresh cilantro
- 1/4 cup mayonnaise
- 2 tablespoons lime juice (freshly squeezed)
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey or maple syrup
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 1/4 teaspoon garlic powder or minced garlic
Instructions
- In a large mixing bowl, combine the green cabbage, purple cabbage, shredded carrots, and chopped cilantro.
- In a small bowl, whisk together the mayonnaise, lime juice, apple cider vinegar, honey, salt, pepper, and optional garlic until smooth.
- Pour the dressing over the cabbage mixture and toss to coat evenly.
- Let the slaw sit for at least 15 minutes to allow flavors to meld. Chill if desired.
- Serve as a side dish or use as a topping for tacos, sandwiches, or grilled meats.
Notes
- This slaw can be made a few hours in advance and stored in the refrigerator.
- For a vegan version, use vegan mayo and maple syrup instead of honey.
- Add sliced jalapeรฑos for a spicy kick.
