Instructions
- Prep the Oven and Pan: Preheat your oven to 350ยฐF (175ยฐC). Grease and flour a 9×5-inch loaf pan, or line it with parchment paper for easy removal.
- Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
- Cream Butter and Sugar: In a large mixing bowl, use an electric mixer to beat the butter and sugar until light and fluffy, about 2-3 minutes.
- Add Eggs and Vanilla: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Add Yogurt and Dry Ingredients: Mix in half the yogurt, then half the dry ingredients. Repeat with the remaining yogurt and dry ingredients, mixing just until incorporated and smooth (donโt overmix).
- Fold in Apples: Gently fold the diced apples into the batter using a spatula, ensuring the apple pieces are evenly distributed.
- Prepare Cinnamon Sugar: In a small bowl, mix together the 1/4 cup sugar and 1 teaspoon cinnamon for the swirl.
- Assemble in the Pan: Pour half the batter into the prepared loaf pan, sprinkle half the cinnamon sugar over the batter, then add the remaining batter on top. Finish with the rest of the cinnamon sugar. Use a knife to gently swirl the cinnamon sugar through the batter.
- Bake: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center comes out clean. Check after 45 minutes and cover with foil if the top is browning too quickly.
- Cool and Serve: Allow the bread to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely. Slice and enjoy warm or at room temperature.
