For the Crust:
- 1 cup (230 grams) unsalted butter, softened
- 2 cups (250 grams) all-purpose flour
- 1/2 cup (100 grams) granulated sugar
- 1/4 teaspoon salt
For the Lemon Filling:
- 4 large eggs, room temperature
- 1 1/2 cups (300 grams) granulated sugar
- 1/4 cup (32 grams) all-purpose flour
- 1/2 cup (120 ml) fresh lemon juice (about 2-3 large lemons)
- 1 tablespoon lemon zest (optional, for extra flavor)
Instructions
- Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the softened butter, 2 cups of flour, 1/2 cup of sugar, and 1/4 teaspoon of salt. Mix until the dough comes together.
- Press the dough evenly into the bottom of an ungreased 9×13-inch baking pan.
- Bake in the preheated oven for about 20 minutes, or until the crust is firm and golden.
- Prepare the Lemon Filling:
- In another bowl, whisk together the eggs, 1 1/2 cups of sugar, 1/4 cup of flour, lemon juice, and lemon zest until well combined and frothy.
- Assemble and Bake:
- Pour the lemon mixture over the baked crust.
- Return the pan to the oven and bake for an additional 25 minutes, or until the filling is set and light golden brown.
- Cool and Serve:
- Remove from the oven and let the bars cool completely on a wire rack.
- Once cooled, dust the top with confectioners’ sugar.
- Cut into squares and serve.
