Ingredients

Units Scale

For the Crust:

  • 1 cup (230 grams) unsalted butter, softened
  • 2 cups (250 grams) all-purpose flour
  • 1/2 cup (100 grams) granulated sugar
  • 1/4 teaspoon salt

For the Lemon Filling:

  • 4 large eggs, room temperature
  • 1 1/2 cups (300 grams) granulated sugar
  • 1/4 cup (32 grams) all-purpose flour
  • 1/2 cup (120 ml) fresh lemon juice (about 2-3 large lemons)
  • 1 tablespoon lemon zest (optional, for extra flavor)

Instructions

  1. Prepare the Crust:
    • Preheat your oven to 350°F (175°C).
    • In a medium bowl, combine the softened butter, 2 cups of flour, 1/2 cup of sugar, and 1/4 teaspoon of salt. Mix until the dough comes together.
    • Press the dough evenly into the bottom of an ungreased 9×13-inch baking pan.
    • Bake in the preheated oven for about 20 minutes, or until the crust is firm and golden.
  2. Prepare the Lemon Filling:
    • In another bowl, whisk together the eggs, 1 1/2 cups of sugar, 1/4 cup of flour, lemon juice, and lemon zest until well combined and frothy.
  3. Assemble and Bake:
    • Pour the lemon mixture over the baked crust.
    • Return the pan to the oven and bake for an additional 25 minutes, or until the filling is set and light golden brown.
  4. Cool and Serve:
    • Remove from the oven and let the bars cool completely on a wire rack.
    • Once cooled, dust the top with confectioners’ sugar.
    • Cut into squares and serve.

Notes

  • For a more pronounced lemon flavor, consider adding the optional lemon zest to the filling.
  • Ensure the bars are fully cooled before cutting to achieve clean slices.
  • Store any leftovers in an airtight container in the refrigerator for up to 4 days.
