Instructions
- Prepare the Coffee Mixture: Dissolve the instant coffee granules in 1 tablespoon of hot water. Let it cool to room temperature.
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- Cream Butter and Sugars: In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
- Add Egg and Flavoring: Beat in the egg, vanilla extract, and the prepared coffee mixture until fully combined.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Optional Add-Ins: Fold in chocolate chips or chopped nuts if desired.
- Chill the Dough: Cover the bowl and chill the dough in the refrigerator for at least 30 minutes.
