Ingredients

Units Scale
  • Dry Ingredients
    • 1 3/4 cups (220g) all-purpose flour
    • 1 tsp baking powder
    • 1/2 tsp baking soda
    • 1/4 tsp salt
  • Wet Ingredients
    • 1/2 cup (115g) unsalted butter, softened
    • 3/4 cup (150g) brown sugar
    • 1/4 cup (50g) granulated sugar
    • 1 large egg
    • 1 tsp vanilla extract
    • 2 tbsp instant coffee granules dissolved in 1 tbsp hot water
  • Optional Add-Ins
    • 1/2 cup (90g) chocolate chips
    • 1/2 cup (50g) chopped nuts (e.g., walnuts or pecans)

Instructions

  1. Prepare the Coffee Mixture: Dissolve the instant coffee granules in 1 tablespoon of hot water. Let it cool to room temperature.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. Cream Butter and Sugars: In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
  4. Add Egg and Flavoring: Beat in the egg, vanilla extract, and the prepared coffee mixture until fully combined.
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Optional Add-Ins: Fold in chocolate chips or chopped nuts if desired.
  7. Chill the Dough: Cover the bowl and chill the dough in the refrigerator for at least 30 minutes.
  8. Preheat the Oven: Preheat your oven to 350ยฐF (175ยฐC) and line baking sheets with parchment paper.
  9. Shape and Bake: Scoop the dough into 1.5-inch balls (about 1 tablespoon each) and place them on the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes or until the edges are set but the centers are still soft.
  10. Cool and Serve: Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

  • For a stronger coffee flavor, increase the instant coffee granules to 3 tablespoons.
  • These cookies stay fresh for up to 5 days when stored in an airtight container at room temperature.
  • Freeze the dough for up to 3 months for make-ahead convenience.
