For the Soup:
- 1 tablespoon olive oil
- 1 cup diced onion

- 1 cup cooked shredded chicken
- 1 pound potato gnocchi
- 2 cups baby spinach

Instructions
- Saute Aromatics: In a large pot, heat olive oil over medium heat. Add onion, celery, and carrots. Cook until softened, about 5 minutes. Add garlic, thyme, salt, and pepper.
