- 1 lb Italian sausage (mild or spicy)
- 4 slices bacon, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 4 medium russet potatoes, thinly sliced or cubed
- 2 cups kale, chopped
- 1 cup heavy cream
- Salt and pepper, to taste
- Crushed red pepper flakes (optional, for extra heat)
Instructions
- Cook the sausage: In a large pot or Dutch oven, brown the Italian sausage over medium heat. Break it apart as it cooks until fully browned. Remove from the pot and set aside.
- Cook the bacon: In the same pot, add the chopped bacon and cook until crisp. Remove the bacon with a slotted spoon and drain the excess fat, leaving about 1 tablespoon in the pot.
- Sautรฉ the onion and garlic: Add the diced onion to the pot and cook for about 5 minutes until softened. Stir in the minced garlic and cook for 1 more minute until fragrant.
- Add the broth and potatoes: Pour in the chicken broth and add the sliced potatoes. Bring to a boil, then reduce the heat and simmer for 10-15 minutes or until the potatoes are tender.
- Add the sausage and kale: Return the cooked sausage to the pot and stir in the chopped kale. Cook for another 5 minutes until the kale is wilted.
- Stir in the cream: Finally, pour in the heavy cream and stir well. Heat the soup until warmed through, but do not let it boil. Season with salt, pepper, and optional red pepper flakes to taste.
- Serve: Ladle the soup into bowls and top with the crispy bacon bits. Enjoy!
Notes
- For a lighter version, you can use half-and-half instead of heavy cream.
- If you prefer a thicker soup, mash some of the potatoes before adding the cream.
