Description

Corn Ribs are a fun and flavorful way to enjoy corn on the cob, cut into rib-like strips, seasoned, and roasted or grilled until caramelized and slightly crispy.


Ingredients

  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh lime wedges, for serving
  • Chopped cilantro, for garnish (optional)

Instructions

  1. Preheat oven to 425°F (220°C) or preheat grill to medium-high heat.
  2. Carefully cut each ear of corn lengthwise into quarters to create rib-like strips.
  3. In a small bowl, mix olive oil, smoked paprika, garlic powder, chili powder, salt, and black pepper.
  4. Brush the corn ribs with the seasoned oil mixture on all sides.
  5. Arrange the corn ribs on a baking sheet lined with parchment paper or place directly on the grill.
  6. Bake for 20–25 minutes or grill for 10–12 minutes, turning occasionally, until the edges are charred and the corn is tender.
  7. Remove from heat, squeeze with fresh lime juice, and garnish with chopped cilantro if desired.

  • Use a sharp knife and stable surface when cutting corn into ribs—cutting through the cob can be tough.
