- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh lime wedges, for serving
- Chopped cilantro, for garnish (optional)
Instructions
- Preheat oven to 425°F (220°C) or preheat grill to medium-high heat.
- Carefully cut each ear of corn lengthwise into quarters to create rib-like strips.
- In a small bowl, mix olive oil, smoked paprika, garlic powder, chili powder, salt, and black pepper.
- Brush the corn ribs with the seasoned oil mixture on all sides.
- Arrange the corn ribs on a baking sheet lined with parchment paper or place directly on the grill.
- Bake for 20–25 minutes or grill for 10–12 minutes, turning occasionally, until the edges are charred and the corn is tender.
- Remove from heat, squeeze with fresh lime juice, and garnish with chopped cilantro if desired.
Notes
- Use a sharp knife and stable surface when cutting corn into ribs—cutting through the cob can be tough.
- Try adding grated parmesan or vegan cheese for extra flavor.
- Serve with dipping sauces like chipotle mayo or garlic aioli.
