Description

  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp cinnamon (optional)
  • Pinch of salt
  • 1โ€“2 tbsp maple syrup or honey (optional, for sweetness)
  • Nonstick cooking spray or butter for greasing

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC). Lightly grease a mini muffin tin with nonstick spray or butter.
  2. In a blender or food processor, combine cottage cheese, mashed bananas, rolled oats, eggs, vanilla extract, baking powder, cinnamon, and salt. Blend until smooth.
  3. If youโ€™d like sweeter bites, add maple syrup or honey and blend again.
  4. Pour the batter into the prepared mini muffin tin, filling each cavity about 3/4 full.
  5. Bake for 12โ€“15 minutes, or until the bites are golden and a toothpick inserted into the center comes out clean.
