- 1 cup cottage cheese
- 2 ripe bananas, mashed
- 1 cup rolled oats
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp cinnamon (optional)
- Pinch of salt
- 1โ2 tbsp maple syrup or honey (optional, for sweetness)
- Nonstick cooking spray or butter for greasing
Instructions
- Preheat your oven to 375ยฐF (190ยฐC). Lightly grease a mini muffin tin with nonstick spray or butter.
- In a blender or food processor, combine cottage cheese, mashed bananas, rolled oats, eggs, vanilla extract, baking powder, cinnamon, and salt. Blend until smooth.
- If youโd like sweeter bites, add maple syrup or honey and blend again.
- Pour the batter into the prepared mini muffin tin, filling each cavity about 3/4 full.
- Bake for 12โ15 minutes, or until the bites are golden and a toothpick inserted into the center comes out clean.
- Let the bites cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
- Serve warm or store in an airtight container in the fridge for up to 5 days.

- You can add mini chocolate chips, chopped nuts, or dried fruit for extra texture and flavor.
