Description

These fluffy, protein-packed Cottage Cheese Egg Bites are a quick and easy breakfast or snack option. Baked in the oven, they’re customizable with your favorite mix-ins like vegetables, herbs, and cheese.   • 1 cup cottage cheese (full fat or low fat)
  • 1/2 cup shredded cheddar cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Vegetable Mix-Ins

  • 1/4 cup finely diced red bell pepper (optional)
  • 2 tablespoons chopped green onions (optional)

  • 23 slices cooked bacon, crumbled (optional)

Instructions

  1. Preheat Oven & Prepare Pan: Preheat your oven to 350ยฐF (175ยฐC). Grease a 12-cup muffin tin with oil or non-stick spray, or line with silicone baking cups for easy removal.
  2. Blend Wet Ingredients: In a blender, combine the eggs, cottage cheese, shredded cheddar, salt, and pepper. Blend until the mixture is smooth and creamy, about 20-30 seconds.
  3. Add Mix-Ins: Pour the blended egg mixture into a mixing bowl. Stir in chopped spinach, red bell pepper, green onions, cooked bacon, and garlic powder (if using).
  4. Fill Muffin Tin: Evenly divide the mixture among the prepared muffin cups, filling each about 3/4 full.
  5. Bake: Place the muffin tin in the oven and bake for 20-25 minutes or until the egg bites are set in the center and lightly golden around the edges.
  6. Cool & Serve: Let the egg bites cool in the pan for 5 minutes before gently running a knife around the edges to release. Serve warm, or store for later.
