- 6 large eggs
- 1 cup cottage cheese (full fat or low fat)
- 1/2 cup shredded cheddar cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper

- 1/4 cup finely diced red bell pepper (optional)

Instructions
- Preheat Oven & Prepare Pan: Preheat your oven to 350ยฐF (175ยฐC). Grease a 12-cup muffin tin with oil or non-stick spray, or line with silicone baking cups for easy removal.
- Blend Wet Ingredients: In a blender, combine the eggs, cottage cheese, shredded cheddar, salt, and pepper. Blend until the mixture is smooth and creamy, about 20-30 seconds.
- Add Mix-Ins: Pour the blended egg mixture into a mixing bowl. Stir in chopped spinach, red bell pepper, green onions, cooked bacon, and garlic powder (if using).
- Fill Muffin Tin: Evenly divide the mixture among the prepared muffin cups, filling each about 3/4 full.
- Bake: Place the muffin tin in the oven and bake for 20-25 minutes or until the egg bites are set in the center and lightly golden around the edges.
- Cool & Serve: Let the egg bites cool in the pan for 5 minutes before gently running a knife around the edges to release. Serve warm, or store for later.

- You can use any combination of vegetables, cheese, or cooked meats you prefer.
- Store leftovers in an airtight container in the fridge for up to 4 days.
- To reheat, microwave on 50% power for 20-30 seconds.
