- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes
- 1 (15 oz) can corn, drained
- 1 (15 oz) can pinto beans, drained and rinsed
- 1 (15 oz) can black beans, drained and rinsed
- 1 (4 oz) can diced green chilies
- 1 (32 oz) carton beef broth
- 1 cup frozen mixed vegetables (optional)
- 1 packet taco seasoning
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
Instructions
- Brown the Beef: In a large pot, cook the ground beef over medium heat until browned. Drain any excess grease.
- Sauté Aromatics: Add the diced onion and minced garlic to the pot. Cook for 2–3 minutes until the onion is soft and fragrant.
- Add Ingredients: Stir in the diced tomatoes, corn, pinto beans, black beans, green chilies, and beef broth. Mix well.
- Season: Add the taco seasoning, smoked paprika, salt, and pepper. Stir to combine.
- Simmer: Bring the soup to a boil, then reduce the heat to low. Simmer uncovered for 20–25 minutes, stirring occasionally.
- Optional Veggies: If using frozen mixed vegetables, add them during the last 10 minutes of cooking.
- Serve: Ladle into bowls and enjoy hot with cornbread or tortilla chips.
Notes
- For extra spice, add ½ teaspoon cayenne pepper or a dash of hot sauce.
