Ingredients

For the Biscuits:

  • 2 cups (250g) all-purpose flour

  • 1/4 cup (50g) granulated sugar

  • 1 tablespoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 teaspoon ground cinnamon

  • 1/2 cup (115g) unsalted butter, cold and cubed

  • 3/4 cup (180ml) buttermilk (or substitute with 3/4 cup milk + 1 teaspoon lemon juice)

  • 1 cup (120g) fresh or frozen cranberries, roughly chopped

  • 1 tablespoon coarse sugar (for sprinkling)

For the Orange Butter:

  • 1/2 cup (115g) unsalted butter, softened

  • 1 tablespoon orange zest

  • 1 tablespoon honey or maple syrup

  • 1/2 teaspoon vanilla extract


Instructions

  1. Preheat the Oven:
    Preheat your oven to 425ยฐF (220ยฐC). Lightly grease a 10-inch cast-iron skillet or baking dish.

  2. Make the Biscuit Dough:
    In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
    Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
    Stir in the buttermilk until just combined, then gently fold in the chopped cranberries.

  3. Shape and Bake:
    Turn the dough out onto a lightly floured surface and gently knead it 2-3 times. Pat the dough into a 1-inch thick circle and cut into 8 wedges.
    Arrange the wedges in the prepared skillet, leaving a little space between each. Sprinkle with coarse sugar.
    Bake for 15-18 minutes, or until the biscuits are golden brown and cooked through.

  4. Make the Orange Butter:
