Creamed Chipped Beef on Toast, also known as “SOS,” is a nostalgic comfort food featuring dried beef in a rich, creamy white sauce served over toasted bread. It’s quick, filling, and perfect for breakfast, lunch, or a cozy dinner.
Ingredients

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 1/2 cups milk (whole milk preferred)

1 (2.5 oz) jar dried beef, rinsed and chopped

Black pepper, to taste

4 slices of bread, toasted

Optional: pinch of cayenne or paprika for a little kick
Instructions

Prepare the Beef:
Rinse dried beef under cool water to reduce saltiness. Pat dry and chop into small strips or bite-sized pieces. -
Make the Roux:
In a medium skillet, melt butter over medium heat. Stir in the flour and cook for 1–2 minutes, stirring constantly, to form a roux. -
Add Milk:
Gradually whisk in the milk until smooth. Continue cooking, stirring often, until the sauce thickens, about 3–5 minutes. -
Add the Beef:
Stir in the chopped beef and season with black pepper. Let simmer for 2–3 minutes until warmed through. Add a pinch of cayenne or paprika if using. -
Serve:
Spoon the creamed beef mixture over hot toast and serve immediately.

For a richer version, use half-and-half instead of milk.
