Description

This creamy chicken asparagus pasta combines tender chicken, fresh asparagus, and a rich, creamy sauce for a delicious and comforting meal. Perfect for a weeknight dinner, this dish is quick to prepare and full of flavor!


Ingredients

  • 2 boneless, skinless chicken breasts (or thighs), cut into bite-sized pieces

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 bunch asparagus, trimmed and cut into 2-inch pieces

  • 1/2 cup chicken broth

  • 1 cup heavy cream

  • 1/2 cup grated Parmesan cheese

  • 8 ounces pasta (penne, fettuccine, or spaghetti)

  • Salt and pepper to taste

  • 1/4 teaspoon crushed red pepper flakes (optional, for a little heat)

 

  • Fresh parsley, chopped (optional, for garnish)


Instructions

  • Cook the pasta according to the package directions. Drain and set aside.

  • While the pasta cooks, heat the olive oil over medium heat in a large skillet. Add the chicken pieces and season with salt and pepper. Cook for 6-8 minutes, or until the chicken is cooked through and browned on all sides. Remove the chicken from the skillet and set aside.

  • In the same skillet, add the minced garlic and cook for about 1 minute, until fragrant.

  • Add the asparagus to the skillet and sauté for 3-4 minutes, until tender but still crisp.

  • Pour in the chicken broth, scraping the bottom of the skillet to deglaze. Let it simmer for 2-3 minutes to reduce slightly.

  • Stir in the heavy cream, Parmesan cheese, and red pepper flakes (if using). Bring to a gentle simmer, then return the chicken to the skillet.

  • Add the cooked pasta to the skillet and toss everything together, making sure the pasta is coated in the creamy sauce.

  • Season with additional salt and pepper to taste. Garnish with chopped parsley if desired.

 

  • Serve warm and enjoy!


Notes

You can substitute the heavy cream with half-and-half for a lighter version, though the sauce won’t be quite as rich.

 

For added flavor, try sprinkling some extra Parmesan on top before serving.
