- 2 cups cooked white rice (or brown rice)
- 2 cups fresh broccoli florets (or thawed frozen broccoli)
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
For the Creamy Sauce
- 1 can (10.5 oz) condensed cream of chicken soup
- 3/4 cup sour cream
- 1/2 cup milk
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp freshly ground black pepper
For the Topping
- 1/2 cup panko breadcrumbs (optional)
- 1 tbsp melted butter (optional)
Instructions
- Prepare Oven and Dish: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with nonstick spray or butter.
- Mix the Sauce: In a large bowl, whisk together the condensed cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and black pepper until smooth and well combined.
- Combine Casserole Ingredients: Add the cooked chicken, cooked rice, broccoli florets, and half of the cheddar cheese to the bowl with the sauce. Gently fold until everything is evenly coated.
- Assemble in Baking Dish: Transfer the mixture into the prepared baking dish. Sprinkle the remaining cheddar cheese and all the mozzarella cheese evenly over the top.
- Add the Topping (Optional): In a small bowl, mix the breadcrumbs with melted butter, then sprinkle evenly over the casserole for a crunchy finish.
- Bake: Place the casserole uncovered in the preheated oven. Bake for 25-30 minutes, or until bubbly and the cheese is golden and melted.
- Rest and Serve: Allow the casserole to cool for 5 minutes before serving. This helps it set and makes serving easier. Enjoy!
