- 1 cup uncooked small pasta (like ditalini, orzo, or small shells)
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon black pepper (adjust to taste)
- 1 teaspoon salt (adjust to taste)
- 1 cup heavy cream
- 3 cups fresh baby spinach, roughly chopped
- 1/2 cup grated Parmesan cheese (optional, for extra creaminess)
- Juice of 1/2 lemon (optional, for brightness)
Instructions
- Sautรฉ the vegetables:
Heat olive oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery. Cook until the vegetables are tender, about 5-7 minutes. - Cook the chicken:
Add the chicken pieces to the pot. Season with salt, pepper, thyme, basil, and oregano. Cook until the chicken is browned on all sides (it doesn’t need to be fully cooked through yet). - Add the broth and pasta:
