Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese (optional)
  • Chopped parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet or pan over medium-high heat. Season the chicken breasts with salt, pepper, paprika, garlic powder, and thyme.
  2. Cook the chicken for 6–7 minutes per side until golden brown and cooked through. Remove the chicken from the pan and set aside.
  3. In the same skillet, add chopped onion and sauté for 3–4 minutes until softened. Add minced garlic and cook for another minute until fragrant.
  4. Add rice to the pan and stir to coat with the onion and garlic mixture. Pour in chicken broth and heavy cream, scraping the bottom of the pan to loosen any browned bits.
  5. Bring to a simmer, then reduce heat to low. Cover the pan and cook for 15-20 minutes, or until the rice is tender and the liquid has been absorbed.
  6. Place the cooked chicken back into the skillet on top of the rice. Cover and cook for an additional 5 minutes to allow the flavors to meld together.
  7. If desired, sprinkle shredded mozzarella cheese on top of the chicken and rice and cover the pan for a few minutes until the cheese is melted and bubbly.
  8. Garnish with chopped parsley and serve hot.

Notes

  • Use chicken thighs for a juicier, more flavorful option.
  • For extra flavor, add a splash of white wine to the sauce before adding the broth and cream.
  • Can be made ahead and reheated in the oven or microwave.
