Ingredients
-
1 package (9 oz) refrigerated cheese tortellini (or your favorite tortellini)
-
4 slices bacon, chopped
-
1 tablespoon olive oil
-
1 cup fresh asparagus, chopped into 2-inch pieces
-
1 cup frozen peas, thawed
-
1/2 cup heavy cream
-
1/2 cup grated Parmesan cheese
-
1/4 teaspoon garlic powder
-
Salt and pepper to taste
-
Fresh parsley, chopped (optional, for garnish)
Instructions
-
Cook the tortellini according to the package directions. Drain and set aside.
-
In a large skillet, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Remove the bacon from the skillet and set aside, leaving the bacon drippings in the skillet.
-
Add the olive oil to the skillet with the bacon drippings. Add the asparagus and sauté for 3-4 minutes until tender.
-
Add the peas and cook for another 1-2 minutes.
-
Pour in the heavy cream and stir in the Parmesan cheese, garlic powder, salt, and pepper. Bring the mixture to a gentle simmer and cook for 2-3 minutes, until the sauce thickens slightly.
-
Add the cooked tortellini to the skillet and toss everything together, making sure the tortellini is coated in the creamy sauce.
-
Stir in the cooked bacon and mix well.
-
Serve the creamy tortellini in bowls, garnished with fresh parsley if desired.
Notes
-
You can use turkey bacon or omit the bacon for a lighter version of the dish.
-
For extra flavor, try adding a squeeze of lemon juice or a sprinkle of red pepper flakes before serving.
