This Creamy Tortellini with Peas, Asparagus, and Bacon is a rich, flavorful pasta dish that combines tender cheese tortellini with fresh vegetables and crispy bacon in a creamy sauce. It’s a perfect weeknight meal that’s easy to make and bursting with delicious ingredients.


Ingredients

  • 1 package (9 oz) refrigerated cheese tortellini (or your favorite tortellini)

  • 4 slices bacon, chopped

  • 1 tablespoon olive oil

  • 1 cup fresh asparagus, chopped into 2-inch pieces

  • 1 cup frozen peas, thawed

  • 1/2 cup heavy cream

  • 1/2 cup grated Parmesan cheese

  • 1/4 teaspoon garlic powder

  • Salt and pepper to taste

 

  • Fresh parsley, chopped (optional, for garnish)


Instructions

  • Cook the tortellini according to the package directions. Drain and set aside.

  • In a large skillet, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Remove the bacon from the skillet and set aside, leaving the bacon drippings in the skillet.

  • Add the olive oil to the skillet with the bacon drippings. Add the asparagus and sauté for 3-4 minutes until tender.

  • Add the peas and cook for another 1-2 minutes.

  • Pour in the heavy cream and stir in the Parmesan cheese, garlic powder, salt, and pepper. Bring the mixture to a gentle simmer and cook for 2-3 minutes, until the sauce thickens slightly.

  • Add the cooked tortellini to the skillet and toss everything together, making sure the tortellini is coated in the creamy sauce.

  • Stir in the cooked bacon and mix well.

 

  • Serve the creamy tortellini in bowls, garnished with fresh parsley if desired.


Notes

  • You can use turkey bacon or omit the bacon for a lighter version of the dish.

 

  • For extra flavor, try adding a squeeze of lemon juice or a sprinkle of red pepper flakes before serving.
