  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs, beaten
  • 2 cups panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • Vegetable oil for frying

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  2. In a shallow dish, combine flour, garlic powder, onion powder, paprika, salt, and pepper.
  3. In a second dish, beat the eggs. In a third dish, mix together panko breadcrumbs and grated Parmesan cheese.
  4. Dip each chicken piece into the flour mixture, coating it evenly. Then dip into the egg, followed by the breadcrumb mixture, pressing down slightly to ensure the breadcrumbs stick.
  5. Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken nuggets in batches, cooking for 3–4 minutes per side until golden brown and crispy. Remove and drain on paper towels.
  6. If desired, transfer the fried nuggets to the prepared baking sheet and bake for an additional 5–7 minutes to ensure they’re fully cooked through.
