Description

These Crispy Parmesan Zucchini Rounds are baked (or air-fried!) to perfection with a golden, cheesy crust. They’re savory, crunchy, and make the perfect low-carb snack or easy veggie side. Just 5 ingredients and ready in under 30 minutes!


Ingredients

  • 2 medium zucchinis, sliced into 1/4-inch rounds

  • 1/2 cup grated Parmesan cheese

  • 1/2 tsp garlic powder

  • 1/2 tsp Italian seasoning (optional)

  • Salt and black pepper, to taste

 

  • Olive oil spray or a drizzle of olive oil


Instructions

Oven Method:

  1. Preheat oven to 425ยฐF (220ยฐC). Line a baking sheet with parchment paper.

  2. Pat zucchini slices dry with a paper towel to remove moisture.

  3. Place slices on the baking sheet in a single layer. Lightly spray or brush with olive oil.

  4. In a small bowl, mix Parmesan, garlic powder, Italian seasoning, salt, and pepper.

  5. Sprinkle the mixture evenly over each zucchini slice.

  6. Bake for 15โ€“18 minutes, or until golden brown and crispy. For extra crispiness, broil for 1โ€“2 minutes at the end.

Air Fryer Method:

  1. Preheat air fryer to 400ยฐF (200ยฐC).

  2. Spray zucchini rounds with oil, coat with the Parmesan mixture, and air fry in a single layer for 8โ€“10 minutes, flipping halfway.


Notes

  • Serve with marinara or ranch for dipping!

  • Add a sprinkle of red pepper flakes for heat.

 

  • Works great with yellow squash too.
