These Crispy Parmesan Zucchini Rounds are baked (or air-fried!) to perfection with a golden, cheesy crust. They’re savory, crunchy, and make the perfect low-carb snack or easy veggie side. Just 5 ingredients and ready in under 30 minutes!
Ingredients

2 medium zucchinis, sliced into 1/4-inch rounds

1/2 cup grated Parmesan cheese

1/2 tsp garlic powder

1/2 tsp Italian seasoning (optional)

Salt and black pepper, to taste

Olive oil spray or a drizzle of olive oil
Instructions
Oven Method:

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

Pat zucchini slices dry with a paper towel to remove moisture.

Place slices on the baking sheet in a single layer. Lightly spray or brush with olive oil.

In a small bowl, mix Parmesan, garlic powder, Italian seasoning, salt, and pepper.

Sprinkle the mixture evenly over each zucchini slice.

Bake for 15–18 minutes, or until golden brown and crispy. For extra crispiness, broil for 1–2 minutes at the end.
Air Fryer Method:

Preheat air fryer to 400°F (200°C).

Spray zucchini rounds with oil, coat with the Parmesan mixture, and air fry in a single layer for 8–10 minutes, flipping halfway.
Notes

Serve with marinara or ranch for dipping!

Add a sprinkle of red pepper flakes for heat.
