- 2 pounds beef stew meat or beef tips
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 cup water
- 1 packet (1 oz) dry onion soup mix
- 1 tablespoon Worcestershire sauce
- 1 can (10.5 oz) cream of mushroom soup
- 2 tablespoons cornstarch (optional, for thickening)
- Salt and pepper, to taste
- 12 ounces egg noodles
- 2 tablespoons butter (optional, for noodles)
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Prep the Beef:ย Season the beef tips with salt and pepper.
- Layer in Crockpot:ย Add the beef tips to the crockpot. Top with diced onions, minced garlic, beef broth, water, dry onion soup mix, Worcestershire sauce, and cream of mushroom soup. Stir to combine.
- Cook:ย Cover and cook onย low for 6-8 hoursย orย high for 4-5 hoursย until the beef is tender.
- Thicken the Gravy (Optional):ย If a thicker gravy is desired, whisk together 2 tablespoons of cornstarch with 2 tablespoons of water. Stir the slurry into the crockpot and cook on high for an additional 15-20 minutes until thickened.
- Cook the Noodles:ย About 20 minutes before serving, boil the egg noodles according to package instructions. Drain and toss with butter, if desired.
- Serve:ย Plate the cooked noodles and top with the beef tips and gravy. Garnish with fresh parsley if desired.
