Description

This Crockpot Lasagna Soup is a hearty and comforting dish packed with all the flavors of traditional lasagna but in soup form. It’s made easy in the slow cooker, perfect for busy days when you want a warm, filling meal without much effort. A family-friendly dish that everyone will love!

 


Ingredients

  • 1 lb ground beef (or Italian sausage)

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 1 (28 oz) can crushed tomatoes

  • 1 (15 oz) can tomato sauce

  • 1 (6 oz) can tomato paste

  • 4 cups beef broth (or chicken broth)

  • 1 teaspoon dried basil

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • 1 teaspoon sugar

  • 1 bay leaf

  • 8 oz lasagna noodles, broken into smaller pieces

  • 1 1/2 cups ricotta cheese

  • 2 cups shredded mozzarella cheese

  • 1/2 cup grated Parmesan cheese

  • Salt and pepper to taste


Instructions

  • In a large skillet over medium heat, brown the ground beef (or Italian sausage) with the diced onion and garlic. Drain any excess fat.

  • Transfer the cooked beef mixture to the crockpot.

  • Add the crushed tomatoes, tomato sauce, tomato paste, beef broth, basil, oregano, thyme, sugar, and bay leaf to the crockpot. Stir everything together and season with salt and pepper.

  • Cover and cook on low for 6–7 hours, or on high for 3–4 hours.

  • About 30 minutes before serving, break the lasagna noodles into pieces and add them to the crockpot. Stir to combine.

  • Once the noodles are tender, remove the bay leaf and stir in the ricotta cheese, 1 cup of mozzarella cheese, and Parmesan cheese. Stir until melted and combined.

 

  • Top with the remaining mozzarella cheese and let it melt befo


Notes

You can make this soup ahead of time and store it in the fridge for up to 3 days. It also freezes well!

 

For extra flavor, add a pinch of red pepper flakes for a little heat.

 

You can use a combination of ground beef and Italian sausage for a richer flavor.
