For the crust:
- 1 1/2 cups (180g) chocolate cookie crumbs or crushed chocolate biscuits
- 1/4 cup (60g) unsalted butter, melted
- 2 tbsp granulated sugar
For the filling:
- 1 cup (250g) ricotta cheese, whole milk
- 1/2 cup (120ml) heavy cream
- 6 oz (170g) dark chocolate (70% cocoa), melted
- 1/3 cup (65g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 tsp salt
For garnish (optional):
- Dark chocolate shavings
- Powdered sugar
- Fresh berries
Instructions
- Prepare the crust:
- Preheat the oven to 350ยฐF (175ยฐC).
- Mix the chocolate cookie crumbs, melted butter, and sugar in a bowl until well combined.
- Press the mixture into the bottom and sides of a 9-inch tart pan.
- Bake for 10 minutes, then set aside to cool.
- Make the filling:
- In a mixing bowl, beat the ricotta cheese until smooth.
- Add the heavy cream, melted dark chocolate, sugar, eggs, vanilla extract, and salt. Whisk until fully combined.
- Bake the tart:
- Pour the filling into the pre-baked crust and smooth the top.
- Bake for 25-30 minutes, or until the center is just set but slightly jiggly.
- Remove from the oven and let it cool completely before refrigerating for at least 2 hours.
- Serve:
- Garnish with chocolate shavings, powdered sugar, or fresh berries.
- Slice and enjoy!
