  • 1 cup (250g) ricotta cheese, whole milk
  • 1/2 cup (120ml) heavy cream
  • 6 oz (170g) dark chocolate (70% cocoa), melted
  • 1/3 cup (65g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp salt

For garnish (optional):

  • Dark chocolate shavings
  • Powdered sugar
  • Fresh berries

Instructions

  1. Prepare the crust:
    • Preheat the oven to 350ยฐF (175ยฐC).
    • Mix the chocolate cookie crumbs, melted butter, and sugar in a bowl until well combined.
    • Press the mixture into the bottom and sides of a 9-inch tart pan.
    • Bake for 10 minutes, then set aside to cool.
  2. Make the filling:
    • In a mixing bowl, beat the ricotta cheese until smooth.
    • Add the heavy cream, melted dark chocolate, sugar, eggs, vanilla extract, and salt. Whisk until fully combined.
  3. Bake the tart:
    • Pour the filling into the pre-baked crust and smooth the top.
    • Bake for 25-30 minutes, or until the center is just set but slightly jiggly.
    • Remove from the oven and let it cool completely before refrigerating for at least 2 hours.
  4. Serve:
    • Garnish with chocolate shavings, powdered sugar, or fresh berries.
