For the Crust
- 2 cups all-purpose flour

- 2/3 cup unsalted butter, cold and cubed

For the Meat Filling
- 1 pound ground beef
- 1/2 pound Italian sausage, casing removed
- 1 cup pepperoni slices (about 4 ounces)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
For the Sauce
- 1 (15-ounce) can tomato sauce
- 1 tablespoon tomato paste
- 1 teaspoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes (optional)
- Salt and pepper, to taste
For the Cheese Layer
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg

- 1 tablespoon olive oil (for pan)
- Extra pepperoni slices, for topping
Instructions
- Prepare the Crust: In a large bowl, combine the flour and salt. Add the cold, cubed butter and cut in using a pastry blender or two forks until the mixture resembles coarse crumbs. Gradually stir in cold water, one tablespoon at a time, until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.
- Cook the Meats: In a large skillet over medium heat, add ground beef and Italian sausage. Cook, breaking up the meat with a spoon, until no longer pink. Add chopped onion and cook until soft, about 4 minutes. Stir in garlic and cook 1 minute more. Drain any excess fat.
- Prepare the Sauce: Add tomato sauce, tomato paste, Italian seasoning, crushed red pepper flakes, and salt and pepper to the skillet with the meats. Simmer on low for 10 minutes until thickened. Remove from heat and fold in the pepperoni slices.
- Mix the Cheese Layer: In a small bowl, combine the mozzarella, Parmesan, and egg. Mix until well blended.
- Assemble the Pie: Preheat the oven to 375°F (190°C). Lightly oil a deep 9-inch pie pan. Roll out the chilled dough and fit it into the prepared pie pan, trimming excess. Add half the meat mixture to the crust, then spread the cheese mixture over it. Top with remaining meat mixture. Finish with extra pepperoni slices and a sprinkle of mozzarella and Parmesan if desired.
- Bake: Place the pie on the center rack and bake for 35-40 minutes, until the crust is golden and the filling is bubbling. Let cool for 10 minutes before slicing.
