Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1/2 teaspoon paprika
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 8 oz pasta (penne, fettuccine, or your choice)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (optional)
  • 1/4 cup reserved pasta water (optional)

Instructions

  1. Cook pasta according to package instructions. Drain and reserve 1/4 cup of the pasta water.
  2. In a large skillet, heat olive oil over medium-high heat. Season chicken with salt, pepper, paprika, and Italian seasoning.
  3. Add chicken to the skillet and cook for 5–7 minutes, stirring occasionally, until golden brown and cooked through. Remove and set aside.
  4. In the same skillet, reduce heat to medium. Add butter and garlic, sauté for 1–2 minutes until fragrant.
  5. Return chicken to the skillet and toss to coat in the garlic butter.
  6. Add cooked pasta and toss everything together. If the mixture seems dry, stir in reserved pasta water a little at a time.
  7. Sprinkle with Parmesan cheese and garnish with fresh parsley before serving.

  • Add a splash of cream or a handful of spinach for a creamy or veggie twist.
