Main Ingredients
- 4 cups cooked chicken, shredded (rotisserie or cooked breasts)
- 1 (10.5 oz) can cream of chicken soup
- 1 (10.5 oz) can cream of mushroom soup
- 1 cup sour cream
- 1 (10 oz) can diced tomatoes with green chilies, drained (Rotel)
- 1 packet taco seasoning
- 2 cups shredded cheddar cheese, divided
- 1 (9.75 oz) bag nacho cheese Doritos
Optional Toppings
- Sliced green onions
- Fresh chopped cilantro
- Diced tomatoes
- Sliced olives
- Extra crushed Doritos
Instructions
- Preheat the Oven:
Preheat your oven to 350ยฐF (175ยฐC) and lightly grease a 9×13-inch casserole dish to prevent sticking. - Prepare the Chicken Mixture:
In a large mixing bowl, combine the shredded chicken, cream of chicken soup, cream of mushroom soup, sour cream, drained Rotel tomatoes, taco seasoning, and 1 cup of the shredded cheddar cheese. Mix thoroughly until everything is evenly incorporated. - Crush the Doritos:
Lightly crush the Doritos chips. You want bite-sized pieces, not crumbs, to give the casserole great texture. - Layer the Casserole:
Spread half of the crushed Doritos in an even layer on the bottom of the prepared casserole dish. Top with the chicken mixture, spreading it out evenly. Sprinkle the remaining Doritos over the chicken mixture, then top with the remaining 1 cup of shredded cheddar cheese. - Bake:
Bake in the preheated oven for 30โ35 minutes, or until the cheese is melted, bubbly, and the casserole is heated through. - Add Toppings & Serve:
Remove from the oven and let sit for a few minutes to set. Top with your favorite garnishes like green onions, cilantro, diced tomatoes, sliced olives, or extra crushed Doritos if desired. Serve warm.
Notes
- Rotisserie chicken is a great shortcut for this recipe.
- You can substitute ground beef or turkey for chicken for a different flavor profile.
- For extra heat, add chopped jalapeรฑos or use spicy taco seasoning.
- This casserole can be assembled ahead and refrigerated; add the top layer of Doritos and cheese just before baking.
- Leftovers reheat well in the microwave, but Doritos may lose some crunch.
