- 1 (10.5-ounce) can condensed cream of mushroom soup
- 1 cup sour cream
- 1 (10-ounce) can diced tomatoes with green chilies (e.g., Rotel), undrained
- 1 (15.25-ounce) can corn, drained
- 1 tablespoon taco seasoning
- 2 cups shredded Mexican cheese blend, divided
- 1 (14.5-ounce) bag nacho cheese-flavored Doritos, crushed and divided
Instructions
- Preheat Oven:
- Preheat your oven to 350ยฐF (175ยฐC).
- Lightly grease a 9×13-inch baking dish with cooking spray.
- Prepare Chicken Mixture:
- In a large bowl, combine the cooked chicken, cream of chicken soup, cream of mushroom soup, sour cream, diced tomatoes with green chilies, drained corn, taco seasoning, and 1 cup of the shredded cheese. Mix until well combined.
- Layer the Casserole:
- Spread half of the crushed Doritos evenly on the bottom of the prepared baking dish.
- Spoon the chicken mixture over the Doritos layer, spreading it evenly.
- Top the chicken mixture with the remaining crushed Doritos.
- Sprinkle the remaining 1 cup of shredded cheese over the top.
- Bake:
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and continue baking for an additional 5-10 minutes, or until the cheese is melted and bubbly.
- Serve:
- Allow the casserole to rest for 5 minutes before serving.
- Optionally, garnish with chopped fresh cilantro, diced tomatoes, or sliced green onions.
