Ingredients

1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized chunks

1 cup long-grain white rice (uncooked)

1 3/4 cups chicken broth

1 cup store-bought or homemade tzatziki sauce

1 cup cherry tomatoes, halved

1 small zucchini, diced (optional)

1 tsp dried oregano

1/2 tsp garlic powder

Salt and pepper, to taste

1/4 cup crumbled feta (optional, for topping)

Fresh parsley or dill, for garnish

Instructions

Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

Combine ingredients:
In the baking dish, stir together the uncooked rice, chicken broth, tzatziki, cherry tomatoes, zucchini (if using), oregano, garlic powder, salt, and pepper. -
Add chicken:
Nestle the raw chicken pieces into the rice mixture and spread everything out evenly. -
Cover and bake:
Cover the dish tightly with foil and bake for 45 minutes. -
Uncover and finish baking:
Remove the foil, sprinkle with feta if using, and bake for another 10–15 minutes, or until the rice is tender and the liquid is absorbed.

Let rest for 5–10 minutes. Garnish with fresh herbs and serve with lemon wedges.
