Description

This Dump-and-Bake Chicken Tzatziki with Rice is a simple, flavorful, one-pan meal made with tender chicken, fluffy rice, and creamy tzatziki sauce. No stovetop steps, no fuss — just mix, dump, bake, and enjoy a healthy dinner that’s full of Mediterranean flair.


Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized chunks

  • 1 cup long-grain white rice (uncooked)

  • 1 3/4 cups chicken broth

  • 1 cup store-bought or homemade tzatziki sauce

  • 1 cup cherry tomatoes, halved

  • 1 small zucchini, diced (optional)

  • 1 tsp dried oregano

  • 1/2 tsp garlic powder

  • Salt and pepper, to taste

  • 1/4 cup crumbled feta (optional, for topping)

  • Fresh parsley or dill, for garnish

 

  • Lemon wedges, for serving


Instructions

  • Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

  • Combine ingredients:
    In the baking dish, stir together the uncooked rice, chicken broth, tzatziki, cherry tomatoes, zucchini (if using), oregano, garlic powder, salt, and pepper.

  • Add chicken:
    Nestle the raw chicken pieces into the rice mixture and spread everything out evenly.

  • Cover and bake:
    Cover the dish tightly with foil and bake for 45 minutes.

  • Uncover and finish baking:
    Remove the foil, sprinkle with feta if using, and bake for another 10–15 minutes, or until the rice is tender and the liquid is absorbed.

 

  • Rest and garnish:
    Let rest for 5–10 minutes. Garnish with fresh herbs and serve with lemon wedges.


Notes

  • Use rotisserie chicken for an even faster version (just reduce baking time and use pre-cooked rice).

  • Great with olives, cucumber, or spinach mixed in for added veggies.

  • Homemade tzatziki gives extra freshness, but store-bought works perfectly too.
