  • 23 tbsp all-purpose flour or chickpea flour

Instructions

  1. Prepare the Chickpeas: Drain the soaked chickpeas thoroughly and pat them dry with a towel. This helps ensure crispiness when air frying.
  2. Blend the Mixture: In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, and (if using) jalapeรฑo. Pulse until the mixture is coarse but holds together. Scrape down the sides as needed to ensure even mixing.
  3. Add Spices and Flour: Add the cumin, coriander, salt, pepper, baking powder, and 2 tablespoons flour to the processor. Pulse again until well combined, but do not over-processโ€”the mixture should still be slightly coarse.
  4. Test and Shape: Test the mixture by pinching a small amount; if it holds together, you’re ready. If not, add more flour (up to 1 more tablespoon) as needed. Use your hands or a small scoop to form the mixture into balls or patties, about 1โ€“1.5 inches in size.
  5. Preheat and Prepare Air Fryer: Preheat your air fryer to 375ยฐF (190ยฐC) for about 5 minutes. Lightly grease the air fryer basket with olive oil spray to prevent sticking.
