Description

This Easy Baked Cod recipe is a quick, healthy, and delicious dinner option perfect for busy weeknights. Flaky, tender cod fillets are seasoned with a simple blend of olive oil, lemon juice, and herbs, then baked to perfection. Serve it with a side of veggies or rice for a complete meal.

Ingredients

Scale
  • 4 cod fillets (about 6 ounces each)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried parsley (or fresh, chopped)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Lemon slices (for serving)
  • Fresh parsley (optional garnish)

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper or lightly grease it.
  2. Pat the cod fillets dry with paper towels and place them on the prepared baking sheet.
  3. In a small bowl, mix together the olive oil, lemon juice, minced garlic, parsley, thyme, paprika, salt, and pepper.
  4. Brush the olive oil mixture evenly over the cod fillets.
  5. Bake in the preheated oven for 12-15 minutes, or until the cod flakes easily with a fork and is opaque in the center.
  6. Remove from the oven and garnish with lemon slices and fresh parsley if desired.
  7. Serve immediately with your favorite sides, such as roasted vegetables, salad, or rice.

Notes

  • You can substitute cod with other white fish like halibut, haddock, or tilapia.
  • Be sure not to overcook the cod, as it can become dry. Check for doneness by gently flaking the fish with a fork.
  • For extra flavor, add a sprinkle of grated Parmesan or breadcrumbs on top before baking.
