Description

This Easy Cheeseburger Soup is a creamy, hearty soup that combines all the flavors of a classic cheeseburger in a comforting bowl. Perfect for busy weeknights, it’s made with simple ingredients like ground beef, potatoes, cheese, and vegetables. Itโ€™s a family favorite thatโ€™s both filling and flavorful!

Ingredients

Units Scale
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cups potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 2 cups shredded cheddar cheese
  • 1/4 cup sour cream

Instructions

  1. Cook the Ground Beef:
In a large pot or Dutch oven, brown the ground beef over medium heat. Drain any excess grease and set the beef aside.
  2. Sautรฉ Vegetables:
In the same pot, add the diced onion, carrots, and celery. Sautรฉ for 5 minutes or until softened.
  3. Add Potatoes and Broth:
Add the potatoes, chicken broth, salt, pepper, and garlic powder. Bring to a boil, then reduce the heat to a simmer. Cook until the potatoes are tender, about 10-15 minutes.
  4. Make the Roux:
In a small saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes. Slowly whisk in the milk until smooth. Cook until slightly thickened.
  5. Combine and Simmer:
Add the roux to the soup, stirring to combine. Add the cooked ground beef back into the pot. Simmer for 5 minutes.
  6. Add Cheese and Sour Cream:
Stir in the shredded cheddar cheese and sour cream until melted and creamy. Adjust seasoning as needed.
  7. Serve:
Ladle the soup into bowls and garnish with additional cheese, bacon bits, or chopped green onions, if desired.

Notes

  • For a thicker soup, mash some of the potatoes before adding the roux.
  • Use sharp cheddar for a more pronounced cheesy flavor.
  • Ground turkey or chicken can be substituted for beef for a lighter option.
