Description

A sweet and savory Southern classic, this easy cheesy pineapple casserole combines tangy pineapple, sharp cheddar cheese, and a buttery cracker topping for a unique and delicious side dish or dessert.


Ingredients

  • 1 (20 oz) can pineapple chunks, drained
  • 1 (20 oz) can crushed pineapple, drained
  • 1 cup granulated sugar
  • 6 tablespoons all-purpose flour
  • 2 cups shredded sharp cheddar cheese
  • 1 sleeve Ritz crackers, crushed
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. In a large bowl, mix together the sugar and flour.
  3. Add the drained pineapple chunks and crushed pineapple to the sugar-flour mixture and stir to combine.
  4. Fold in the shredded cheddar cheese.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. In a separate bowl, mix the crushed Ritz crackers with the melted butter until combined.
  7. Sprinkle the buttery cracker mixture evenly over the pineapple mixture.
  8. Bake for 30–35 minutes or until the top is golden and bubbly.
  9. Remove from oven and let cool slightly before serving.
